Proximal and mineral composition of native fish species from Amazonas, Brazil

For decades, researches were developed about the diversity of fishes in Amazon basin and their consumption by people. In this context, an important gap identified was a lack information nutritional composition some main fish species consumed traded. Front this, objective study to evaluate chemical mineral content filets from 10 with highest landing volume Amazonas State. The selected curimatã, jaraqui, mapará, matrinxã, pacu, piramutaba, sardinha, surubim, tambaqui tucunaré. Were collected 20 samples (fishes) each according hydrological cycles region (20 flood drought). Ten processed determine proximal used (macro micro minerals). analysed varied widely between seasons, emphasis on moisture lipid content. Fishes season presented higher nutrients than drought season. This result also observed minerals profile, where (p < 0.05)
